One-Pot Broccoli Cheddar Chicken is a healthy chicken recipe that is the ultimate healthy comfort food and is packed with greens. Broccoli cheddar anything has my heart, but this one-pot or one-pan chicken recipe has to be one of my favorites. It is excellent on its own or on top of brown rice or quinoa.

Why I love this Chicken Recipe
I almost always have boneless skinless chicken thighs in my house and there is no better way to use them than with this tender, flavorful, and comforting cheesy chicken bake. It is gluten-free and grain-free which makes it a lot lighter than typical broccoli cheddar chicken dishes I’ve had before.
You can make this recipe in one pot. I like to use an oven-safe enamel cast iron skillet, but if you don’t have one you could make it in a skillet and then finish it off in a casserole dish. It is so simple to make and you will not believe how flavorful it is.
I love how this meal is focused on protein and greens. It’s family-friendly but also very nourishing. at the same time.

- Oven-safe skillet
- Good quality chicken broth
- Cheese Grater
How To Make Broccoli Cheddar Chicken
Preheat the oven to 400 degrees F.
In an oven-safe skillet, over medium heat, add olive oil, chicken thighs, and diced onion. Season with salt and pepper. Cook for 5 minutes on each side, then remove from the pan.
In the same skillet, add 1/2 cup chicken stock, 1/2 cup whole milk or cream, and 1 1/2 cups of the grated cheddar, garlic powder, salt, and pepper. Simmer for 5 minutes over medium-low heat until the sauce begins to thicken slightly.
Add the broccoli florets and stir into the sauce. Then add the chicken thighs and onions into the skillet.
Top with the remaining cheddar and the parmesan.
Bake for 15-20 minutes until everything is bubbly and brown, and the chicken is fully cooked through.

- 1 lb Chicken Thighs – boneless, skinless or chicken breasts
- 4 cups Fresh Broccoli Florets
- 1 Yellow Onion diced
- 1/2 cup Chicken Stock
- 1/2 cup Whole milk or cream
- 2 cups Sharp White Cheddar Cheese grated
- 1/4 cup Parmesan Cheese grated
- 1 tablespoon Extra-Virgin Olive Oil
- 1 teaspoon Garlic Powder
- Salt and Pepper to taste
