Bacon, Egg, and Chive Egg Bites.

These bacon, egg, and chive egg bites are cheesy, filling, and a perfect savory breakfast! They are perfect for meal prep for busy days when you want something to keep you satisfied and your energy nice and stable. I love keeping a few of these in the fridge to warm up in the morning. Egg bites are also great to pair with your morning coffee to keep the coffee jitters at bay. You’ll quickly fall in love with this morning staple.

To get started making this recipe, you’ll want to gather these ingredients:

  • uncured bacon, cooked until just crispy
  • large eggs
  • heavy cream or half and half
  • shredded cheddar cheese (white or yellow)
  • parmesan cheese
  • chives

Here’s How To Make My Bacon, Egg, and Chive Egg Bites

Step by Step Instructions

  1. Cook the bacon until just crispy, drain on paper towels, and roughly chop. Set aside.
  2. Preheat the oven to 350℉. In a medium-sized bowl, add all of the ingredients and whisk together to combine fully. Use a measuring cup to scoop or pour the filling into the muffin liners almost to the top.
  3. Bake the egg bites for 12-14 minutes until the eggs are fully set and cooked. Remove from pan to a cooling rack and let cool completely. Store covered in the fridge for up to 4 days.

  • 4 oz shredded cheddar cheese (white or yellow)
  • 1 oz parmesan cheese, grated
  • ¼ cup chives, chopped
