Apricot White Chocolate Date Bars

Equipment

  • Food Processor

Ingredients
  

  • 1 cup dried apricots
  • 1 cup medjool dates, pits removed
  • ¾ cup raw pumpkin seeds
  • ¼ cup mini white chocolate chips
  • 1-2 tbsp hemp hearts, optional

Instructions
 

  • Line an 8 x 8" baking pan with unbleached parchment paper and set aside.
    In the bowl of a food processor, add the apricots, pitted dates, and pumpkin seeds.
    Pulse the mixture together until it forms a ball or a very chunky paste. (The texture of a Lara Bar)
  • Add the chocolate chips and pulse the processor a few times, just until the chocolate chips are combined.
  • Turn the mixture into the prepared 8 x 8 pan and press it down firmly with a spatula or the bottom of a measuring cup.
    Place in the fridge for at least 30 minute before slicing and storing. I like to store mine in the fridge for a cool, chewy treat. Enjoy!
