Chutney Chicken Salad
Ingredients
- ½ cup plain whole milk greek yogurt
- ¼ cup good mayo
- ⅓ cup Major Grey's Chutney
- 1 tsp lime zest
- 2 tbsp lime juice
- ½ tsp curry powder
- 13 ¼ oz can pineapple tidbits or chunks, drained
- 1 cup thinly sliced celery
- ½ cup green onions, thinly sliced
- ½ cup sliced almonds optional: lightly toasted
- 4 cups cooked and chopped chicken breast
- salt and pepper to taste
Instructions
- In a mixing bowl, combine the greek yogurt, mayo, chutney, lime zest, lime juice, curry powder, salt and pepper. Mix well.
- Next, gently fold in the rest of the ingredients ( I like to reserve some of the green onions and sliced almonds to sprinkle on top as a garnish).Cover and chill for at least 3-4 hours, the longer the better, to allow the flavor to develop.Before serving, sprinkle with sliced green onions and a few sliced almonds. Serve cold. Enjoy!
