- 1 cup dried apricots
- 1 cup medjool dates, pits removed
- ¾ cup raw pumpkin seeds
- ¼ cup mini white chocolate chips
- 1-2 tbsp hemp hearts, optional
Instructions
- Line an 8 x 8" baking pan with unbleached parchment paper and set aside. In the bowl of a food processor, add the apricots, pitted dates, and pumpkin seeds. Pulse the mixture together until it forms a ball or a very chunky paste. (The texture of a Lara Bar)
- Add the chocolate chips and pulse the processor a few times, just until the chocolate chips are combined.
