Easy Weeknight Beef Meatloaf
Equipment
- 9 x 13 baking dish
Ingredients
- 3 lbs lean ground beef
- 2 medium sweet onions, finely diced
- 1 large red bell pepper diced I use red, yellow, or a combo
- 3 eggs, beaten
- 15 oz diced tomatoes, drained well
- 1½ cups fresh sourdough breadcrumbs, see note. I take my everyday crust sourdough bread and pulse it in a food processor to make the breadcrumbs. Add them straight into the meatloaf mix.
- 3½ tsp sea salt The actual amount varies depending on the kind of salt you use. This is a rough estimate.
- 1 tsp black pepper
For Ketchup Topping
- 1 cup ketchup
- 2-4 tbsp dark brown sugar
Instructions
- Preheat oven to 375 °F.
- Mix ground beef, onion, bell pepper, egg, diced tomatoes, sourdough breadcrumbs, salt, and pepper until well-combined and place in a 9 x 13 baking dish. Pat it down until it is even across the pan.
- Bake in the preheated oven for 45 minutes, then drain as much grease off into a trash container or jar to dispose of. Continue baking for 10-15 more minutes, then drain again.
- After baking, remove the meatloaf from oven and set the oven to a low broil.Mix ketchup and brown sugar, then spread it on the meatloaf. Broil for 2-5 minutes until the ketchup is bubbly and caramelized, being careful not to burn the ketchup.
- Remove from the oven, cover with foil, and let rest for 5-10 minutes before serving.
