Easy Weeknight Beef Meatloaf

Equipment

  • 9 x 13 baking dish

Ingredients
  

  • 3 lbs lean ground beef
  • 2 medium sweet onions, finely diced
  • 1 large red bell pepper diced I use red, yellow, or a combo
  • 3 eggs, beaten
  • 15 oz diced tomatoes, drained well
  • cups fresh sourdough breadcrumbs, see note. I take my everyday crust sourdough bread and pulse it in a food processor to make the breadcrumbs. Add them straight into the meatloaf mix.
  • tsp sea salt The actual amount varies depending on the kind of salt you use. This is a rough estimate.
  • 1 tsp black pepper

For Ketchup Topping

  • 1 cup ketchup
  • 2-4 tbsp dark brown sugar

Instructions
 

  • Preheat oven to 375 °F.
  • Mix ground beef, onion, bell pepper, egg, diced tomatoes, sourdough breadcrumbs, salt, and pepper until well-combined and place in a 9 x 13 baking dish.
    Pat it down until it is even across the pan.
  • Bake in the preheated oven for 45 minutes, then drain as much grease off into a trash container or jar to dispose of.
    Continue baking for 10-15 more minutes, then drain again.
  • After baking, remove the meatloaf from oven and set the oven to a low broil.
    Mix ketchup and brown sugar, then spread it on the meatloaf.
    Broil for 2-5 minutes until the ketchup is bubbly and caramelized, being careful not to burn the ketchup.
  • Remove from the oven, cover with foil, and let rest for 5-10 minutes before serving.
