Quick Summer Berry Compote

Servings 8 servings

Ingredients
  

  • 4 cups Fresh berries, I like using strawberries and blueberries for this recipe Or frozen berries.
  • cup water
  • ½ cup raw cane sugar Maple syrup or coconut sugar can be substituted for cane sugar.
  • 2 tbsp corn starch (mixed with 2 tbsp water) or arrowroot powder
  • ½ lemon, zest and juice

Instructions
 

  • In a medium pot over medium heat, add the berries, ⅓ cup water, lemon juice, lemon zest, and sugar.
    Bring the mixture to a boil, stirring often.
  • In a measuring cup, combine the cornstarch and water with a fork, then slowly pour it into the berry mixture.
    Allow the berry mixture to continue cooking until the mixture coats a wooden spoon.
  • Remove from the heat and let cool before storing in the fridge for up to 1 week.
