Slow Cooker Smoky Jalapeño Beef Roast

Equipment

  • slow cooker or crock pot

Ingredients
  

  • 1 4 lb Boneless Beef Chuck Roast
  • 1 yellow onion, roughly chopped
  • 4 cloves garlic
  • 1 jalapeno, ribs removed, seeded, and roughly chopped
  • tsp ground cumin
  • 1 tsp chipotle chili powder
  • 1 tsp dried oregano
  • 1 tbsp apple cider vinegar
  • ¼ cup avocado oil
  • 16.9 oz beef bone broth or beef stock

Instructions
 

  • Place the onion, jalapeño, oregano, cumin, chipotle powder, salt, and pepper in a food processor and process until they form a paste and all the ingredients are chopped.
  • Using a sharp knife, poke 12 holes in the top and sides of the beef to allow the paste to seep into the meat. Place the beef in the slow cooker.
  • Rub the paste over the entire exterior of the meat. Pour the beef bone broth into the bottom of the pot.
  • Place the lid on the slow cooker and cook on low for 6-8 hours. Allow the meat to rest for 15 minutes after cooking. Serve with a squeeze of fresh lime juice.
