Slow Cooker Smoky Jalapeño Beef Roast
Equipment
- slow cooker or crock pot
Ingredients
- 1 4 lb Boneless Beef Chuck Roast
- 1 yellow onion, roughly chopped
- 4 cloves garlic
- 1 jalapeno, ribs removed, seeded, and roughly chopped
- 1½ tsp ground cumin
- 1 tsp chipotle chili powder
- 1 tsp dried oregano
- 1 tbsp apple cider vinegar
- ¼ cup avocado oil
- 16.9 oz beef bone broth or beef stock
Instructions
- Place the onion, jalapeño, oregano, cumin, chipotle powder, salt, and pepper in a food processor and process until they form a paste and all the ingredients are chopped.
- Using a sharp knife, poke 12 holes in the top and sides of the beef to allow the paste to seep into the meat. Place the beef in the slow cooker.
- Rub the paste over the entire exterior of the meat. Pour the beef bone broth into the bottom of the pot.
- Place the lid on the slow cooker and cook on low for 6-8 hours. Allow the meat to rest for 15 minutes after cooking. Serve with a squeeze of fresh lime juice.
