Herby Rotisserie-Style Chicken Breasts

Ingredients
  

  • 2 boneless, skinless chicken breasts or boneless, skin-on chicken breasts Bake 25-30 minutes for skinless and 35-40 minutes for skin-on. Cooking times may vary according to the size of the chicken breast.
  • 2 tbsp avocado oil
  • 1 tsp dried basil
  • 1 tsp oregano
  • 1 tsp garlic powder
  • 1 tsp sea salt
  • ½ tsp black pepper
  • ½ tsp paprika

Instructions
 

  • Preheat the oven to 400℉. Mix the seasonings together in a small bowl.
  • Place the chicken breasts on a parchment-lined baking sheet and drizzle with avocado oil. Turn the chicken around to coat the chicken in the oil.
  • Season both sides of the chicken liberally with the seasoning blend.
  • Bake for 25-30 minutes for skinless chicken breasts or 35-40 minutes for skin-on chicken breasts, until the chicken is cooked through and lightly browned.
    Cooking times may vary according to the size of the chicken breast.
    Optional: turn on the broiler for the last two minutes of baking.
  • Cover the chicken tightly with aluminum foil and allow it to rest for 5 minutes before cutting. 
    Refrigerate in an airtight container for up to 5 days.
