Lentil and Kale Superfood Salad
Ingredients
- 1 cup cooked lentils I simmer mine in broth
- 1 bunch dinosaur kale, chopped
- ½ small red onion, finely diced
- ½ cup thawed, frozen edamame
- 1 medium carrot, peeled and grated
- ½ cup roasted pecans or walnuts
- 2 tbsp sesame seeds
For the Dressing
- ⅓ cup olive oil or avocado oil
- ¼ cup raw apple cider vinegar
- 2 tbsp maple syrup
- 1 tbsp whole grain mustard
- sea salt and pepper to taste
Instructions
- In a large mixing bowl, add the ingredients for the dressing and whisk well to combine.Add the diced red onion and allow it to sit in the dressing while you prepare the salad ingredients. (5-10 minutes)
- Add the rest of the prepared salad ingredients and toss, making sure that the kale and lentils are fully coated in the dressing. Serve chilled.Best eaten within 2-3 days.
