Spiced Cranberry Almond Bars.

Spiced Cranberry Almond Bars.

These wholesome bars have a medley of mix-ins that are salty, sweet, crunchy, and chewy. Perfect for stashing on the countertop!

Servings 10 snack bars

Equipment

  • 8 or 9 inch square cake pan

Ingredients
  

  • ¼ cup raw honey
  • 1 tsp vanilla extract
  • 1 tbsp runny almond butter
  • cups raw almonds, coarsely chopped
  • ½ cup dried cranberries
  • ½ cup raw pepitas, lightly salted
  • ¼ cup almond flour
  • 1 tsp pumpkin pie spice

optional drizzle

  • ½ cup semi-sweet chocolate chips or white chocolate chips, melted for drizzling or dipping

Instructions
 

  • Preheat the oven to 300℉. Line an 8 inch square baking pan with parchment paper, letting some hang over the sides for easy removal of the bars after baking. Set aside.
  • In a large mixing bowl, add the honey, vanilla extract, and almond butter and stir it together with a spatula or wooden spoon.
  • Next, add the rest of the ingredients, stirring to combine. Place the mixture in the prepared baking pan and press it firmly with the back of a measuring cup.
  • Bake the bars in the preheated oven for 20 minutes. Then, remove from oven and let cool completely (1 hour) in the pan until the bars have set.
    Then refrigerate the bars for an hour before cutting and storing in an air-tight container

Storage

  • Individually wrap the bars in parchment paper or plastic wrap or store them in an air-tight container. Store at room temperature for up to 1 week.

Optional drizzle

  • Melt the chocolate chips over a double broiler until just melted. Cool slightly, then drizzle or dip the bars. Place in the fridge for 30 minutes or until chocolate has fully set before storing.
