Broccoli Cheddar Chicken is a healthy one-pot chicken recipe that is the ultimate healthy comfort food and is packed with greens. Broccoli cheddar anything has my heart, but this one-pot or one-pan chicken recipe has to be one of my favorites. It is excellent on its own or on top of brown rice or quinoa.
Preheat the oven to 400 degrees F. In an oven-safe skillet, over medium heat, add olive oil, chicken thighs, and diced onion. Season with salt and pepper. Cook for 5 minutes on each side, then remove from the pan.
In the same skillet, add 1/2 cup chicken stock, 1/2 cup whole milk or cream, and 1 1/2 cups of the grated cheddar, garlic powder, salt, and pepper. Simmer for 5 minutes over medium-low heat until the sauce begins to thicken slightly.
Add the broccoli florets and stir into the sauce. Then add the chicken thighs and onions into the skillet. Top with the remaining cheddar and the parmesan.
Bake for 15-20 minutes until everything is bubbly and brown, and the chicken is fully cooked through.
