One-Pot Broccoli Cheddar Chicken

Broccoli Cheddar Chicken is a healthy one-pot chicken recipe that is the ultimate healthy comfort food and is packed with greens. Broccoli cheddar anything has my heart, but this one-pot or one-pan chicken recipe has to be one of my favorites. It is excellent on its own or on top of brown rice or quinoa.

Equipment

  • 1 skillet oven-safe

Ingredients

  • 1 lb Chicken Thighs - boneless, skinless or chicken breasts
  • 4 cups Fresh Broccoli Florets
  • 1 Yellow Onion diced
  • 1/2 cup Chicken Stock
  • 1/2 cup Whole milk or cream
  • 2 cups Sharp White Cheddar Cheese grated
  • 1/4 cup Parmesan Cheese grated
  • 1 tablespoon Extra-Virgin Olive Oil
  • 1 teaspoon Garlic Powder
  • Salt and Pepper to taste

Instructions

  • Preheat the oven to 400 degrees F.
    In an oven-safe skillet, over medium heat, add olive oil, chicken thighs, and diced onion. Season with salt and pepper. Cook for 5 minutes on each side, then remove from the pan.
  • In the same skillet, add 1/2 cup chicken stock, 1/2 cup whole milk or cream, and 1 1/2 cups of the grated cheddar, garlic powder, salt, and pepper. Simmer for 5 minutes over medium-low heat until the sauce begins to thicken slightly.
  • Add the broccoli florets and stir into the sauce. Then add the chicken thighs and onions into the skillet. Top with the remaining cheddar and the parmesan.
  • Bake for 15-20 minutes until everything is bubbly and brown, and the chicken is fully cooked through.
