Beef Taco Crunch Wraps.

Skip the drive-thru and make these homemade beef taco crunch wraps!

Equipment

Ingredients
  

  • 1 lb grass-fed ground beef
  • 4-6 standard tortillas I prefer the kind made using avocado oil
  • 8 oz shredded Colby jack cheese or your preferred cheese
  • 4.5 oz shredded green leaf lettuce
  • 1 large heirloom tomato, diced
  • 1/3 cup mild salsa, more to taste and for dipping
  • 1 tsp chili powder
  • ½ tsp each cumin, garlic powder, onion powder, paprika
  • salt and pepper to taste
  • sour cream or greek yogurt, for serving
  • avocado oil spray

Instructions
 

  • In a medium cast iron skillet over medium-high heat, add the ground beef and brown.
    After the meat is fully cooked through, season the meat with chili powder, cumin, garlic powder, onion powder, paprika, salt and pepper to taste.
    Then stir in the salsa and cook for 1 minute more.
  • Remove the meat from the skillet and clean the skillet or use a different one.
    Now, fill the tortillas with the tortillas evenly with the ground beef, shredded cheese, tomatoes, and shredded lettuce.
    Fold the tortillas up burrito-style.
  • Heat a skillet over medium-high heat, then spray the skillet with avocado oil.
    Place 1-2 of the crunch wraps in the pan at a time and cook for 1-2 minutes, seem-side down, or until golden brown and crunchy.
    Flip the wraps overs and cook for another minute or 2 until golden.
    Remove from the skillet and slice in half. Serve with extra salsa, sour cream, or avocado. Enjoy!
